We have been out of sausage for awhile so when there was a good sale on pork this week there was only one thing to do, get the smoke house cranked up. We were wanting to do another batch before the kids went away to school so the timing was perfect. It is so much nicer to start making sausage when we don't have to start with a live pig. Even though we have made sausage countless times, each time it turns out a little bit different. This time our sausage turned out a bit lighter in color and we have no idea why. It still quite tasty. And I am sure it will all be gone by the time the kids head to school.
